Seasonal Green Brussel Sprout Walnut and Goji Berry Salad Recipe

Here’s another favorite salad recipe that is packed with nutrient dense plant based foods that I love and that I am so excited to share with you! When adding more plant based foods to your diet it makes all the difference to have delicious recipe go to’s like this one. This salad offers your body essential fats, enzymes, macro and micro nutrients, minerals and vitamins through raw nuts and seeds, raw vegetables, leafy greens, berries, and sub acid fruit (if including pomegranates). Ingredients:

1 cup finely chopped Kale

1 cup finely chopped Brussel Sprouts

Green and Red Leaf Lettuce finely chopped to your desire

Goji Berries Sprinkle on top to your desire

1/4 cup Pomegranate (if in season)

1/4 cup chopped Walnuts

1/2 Cup Cashew

1 tsp Nutritional Yeast

Freshly chopped Chives

1 to 2 Peeled Garlic Cloves

Himalayan Pink Salt to taste

2 tbsp Hemp Seeds

Apple Cider Vinegar 1tbsp

Olive Oil 2-3 Tbsp

Mustard Powder pinch to taste

Filtered Water

Salad Base Ingredients:

Finely chop Kale, Brussel Sprouts, Green and Purple leaf lettuce. The finer we chop the less chewing we have to do. Remember, chewing your food completely creates beneficial enzymes starting in your mouth that assist the process of digestion. If you are super hungry and don’t think you can take the time to chew, chew, chew, drink a green juice before eating your salad so you can really savour and enjoy the chewing process.

Cashew Cheese:

Soak Cashews over night (8-10hrs) to release enzymes and support easier digestion and a creamy texture for the cheese. In a food processor blend Cashews, Hemp Seeds, Chives, Garlic, Nutritional Yeast, Himalayan Pink Salt, and Filtered Water to taste. Should be a creamy thick texture. Dry and shape with Cheese Cloth.

Apple Cider Dressing:

Apple Cider Vinegar, Cold Pressed Olive Oil, Lemon Juice, Garlic, Mustard Powder, Himalayan Pink Salt, Filtered Water. Can put in a Vitamix or food processor to blend.
