Smoothie Bowls

Smoothie Bowls

Smoothie bowls are a favorite meal of mine, especially in warm weather and when so many beautiful fruits are abundant at the local markets and grocery stores. It can be a cost effective, satisfying, and nutritious meal option as we can buy many ingredients in bulk such as nuts, dried coconut, cacao nibs, dried goji berries, bananas, berries, etc. I sometimes buy frozen acai berry packets like pictured and add a little water or oat milk to blend for the base. I also like to add Sun Warrior raw vegan protein powder and a pinch of spirulina powder for extra protein and nutrients.

My favorite fruits to add to my smoothie bowls are berries (blueberries, strawberries, blackberries, raspberries), which are high in antioxidants, fiber and vitamins. To save money I sometimes buy my berries frozen. I also love adding mangos and bananas. If eating berries I always make sure to wash well and buy organic and non GMO. With smaller berries like blueberries I will soak and rinse and make sure to towel dry and air dry before refrigerating for storage. As pictured I will brush my strawberries to get off any toxins or dust that may get caught in the skin’s grooves.

I I usually top my smoothie bowls with cacao nibs, coconut flakes, and goji berries which I buy in bulk and find last me about a month or longer. It is also delicious to add some granola, almonds, and my favorite nuts (almonds, walnuts, pecans).

Smoothie bowls are nutrient dense meals that support digestive health with high fiber, increase satiety, and energy.

Eat to live your best life! InJoy the meal idea.

Love,

Shannon
